The Hydroponically Grown Health Food Vegetable


Serves 4

Stuffed Tomatoes

INGREDIENTS:
4 Tomatoes
250gr. Philadelphia Cream Cheese
1 tablespoon Fruit Chutney


1 piece Witlof
3 Spring Onions

METHOD:
Core and score Tomatoes; dip briefly in boiling water, then refresh in cold water to remove skin. Blend cream cheese and fruit chutney (if too thick, add a touch of cream). Mix in finely sliced Witlof and chopped spring onions. Remove centre from tomatoes and stuff with cream cheese mixture.

Serves 4-6

Ham Witlof

INGREDIENTS:
4 Witlof
Juice of 1 lemon
4 Ham slices


Sliced or grated cheese
Pinch of Paprika


METHOD:

Cook the Witlof in water with lemon juice for approx. 10 minutes. Drain off water and dry on paper towelling. Wrap one slice of ham around each Witlof and place in baking dish. Cover with grated or sliced cheese or cheese sauce. Put in moderate oven or griller till brown on top.

Serves 4

Redlof Prawn Cocktail

INGREDIENTS:
250g Redlof
200g peeled prawns

 


1 apple
1/2 tin drained Mandarines

For the dressing:
3 tbsp. mayonnaise
1 tbsp. mandarine syrup or white wine
½ tbsp. cream

 


1 tsp. tomato paste
Dash of lemon juice


METHOD:

Mix the dressing ingredients and set aside. Decorate four cocktail glasses with the outer leaves of teh Redlof heads. Cut remaining Redlof into cubes. Cut peeled apple into matchsticks. Lightly toss Redlof cubes, prawns, apple and mandarine pieces. Divide over four prepared cocktail glasses. Pour some of the previously prepared dressing over each cocktail serving and garnish with a sprig of parsley
