The Hydroponically Grown Health Food Vegetable


Serves 4

Witlof, Alfalfa & Snow Pea Salad

INGREDIENTS:
3 pieces Witlof
1 container Alfalfa

For the dressing:
1 Lemon
1 Lime

 


100gr. Snow Peas



1/2 cup honey

METHOD:
Cut Witlof in half lengthwise, remove core and seperate leaves. Arrange in ring at edge of bowl. Add Alfalfa in ring beside Witlof. Blanch Snow peas and refresh in cold water. Place Snow peas in centre of bowl.

DRESSING:

Cobine juice of lemon and lime with honey.

Serves 4

Witlof, Pecan Nut & Almond Salad

INGREDIENTS:
5 pieces Witlof
100g Pecan Nuts
100g sliced Almonds

 


2 Blood plums
1 Capsicum
1 cup Mayonnaise

METHOD:
Cut Witlof in half lengthwise, remove core and seperate leaves. Roughly chop Pecan Nuts into medium size chunks. Add Almonds and combine with Mayonnaise.

Garnish with slices of Blood plums and Capsicums.

Serves 4

Special Dutch Witlof Salad

INGREDIENTS:
2 Witlof
½ Tomato
½ Apple, or other fruit
¼ stick Celery


Red Capsicum, to taste
1 tablespoon Sultanas
1 tablespoon Low Calorie French Dressing, or mayonnaise

METHOD:
Shred Witlof finely. Slice tomato & capsicum. Add chopped-up apple, celery and sultanas for a delightful fresh tasting salad. Toss all ingredients together, adding French dressing or mayonnaise.
