Witlof is grown from seed, and when harvested, after 5 months, the roots resemble Turnip roots. These roots are firstly coolstored for a short period, to resemble winter, and then replanted in special growing trays, and placed in Hydroponic growing rooms. The temperature in these rooms, as well as the water quality, are strictly controlled and in approximately 4 weeks these roots will have produced a tightly bunched head of leaves.
